It’s All About the Hummus, Honey

One thing that flies through my kitchen is homemade hummus. It’s perfectly paired with veggies, a spread on a sandwich, dipping pita, on a bowl, etc. There are plenty of options and ways to customize this to your preferences. The main ingredient in hummus is chickpeas. These are not to be slept on, as they are great vessels for protein, fiber, and packed with vitamins & minerals. That’s what keeps you not only satisfied, but full with the energy to take on the day.

Like many of my recipes on Meg’s Full Plate, this is a recipe that doesn’t break the bank or take an afternoon to make. You can accomplish this recipe (likely with many items in your pantry) in a matter of minutes. But pro tip, once you make it, you will never stop. So, if you love it (and/or have a family of 3+), I would recommend doubling the recipe so that you can enjoy it all week long.

RECIPE

INGREDIENTS

  • 1 can chickpeas, drained and rinsed
  • 1-2 small cloves of garlic (I L O V E garlic and used 2)
  • 1 1/2 TBS lemon juice
  • 3 TBS Tahini
  • 3 TBS Olive Oil
  • 2-3 TBS water
  • 1 tsp salt

Once you master this recipe, add your own spin! Consider adding beets, red peppers, etc. to make it your own based on your favorite flavors!

DIRECTIONS

  • Open your chickpeas, drain and rinse in the sink.
    • OPTIONAL (but not for me): This will take some time, which is why I marked it optional. I, for lack of a better word, pluck the filmy skin off of each chickpea. I find this makes it significantly creamier and it was how I was taught to make hummus. However, if you’re pressed for time or aren’t super concerned with it being ultra creamy, feel free to skip this optional step and keep going!
  • Add the chickpeas to your food processor. Add garlic, lemon juice, tahini, olive oil, and salt
  • Blending, add the water into the top of the food processor slowly. We want to let it incorporate slowly to control how thick/thin the hummus consistency is.
  • Take the top off, stir and taste. If you feel it needs more of any ingredient, add. Reminder to add lightly: You can always add more, but you can’t take it out once it’s added.
