I think we’ve all had the green bean casserole, right? It’s rich, delicious, and 6,000% came from canned soup. Grandmas everywhereee claiming it’s their secret recipe, and we let them. Because it’s so tasty and creamy and comforting during the winter months. My mom pledged never to have it in our home, and I was devastated. I love her, but come on! This is a holiday staple.
Oh well, it was time for a new staple. One that is a tad healthier and completely homemade. Are you up for the challenge?
Rather than using your trusty can opener to start the glunky process, we’re going to make our own creamy of mushroom for this dish. Incorporating the roux recipe from earlier this month, we can easily make this delectable crowd pleaser.
RECIPE
Ingredients
1lb green beans
1 medium size white onion, very thinly sliced (I use my mandoline slicer)
1 1/2 TBS butter
1 8oz package of baby bella mushrooms, thinly sliced
2 TBS roux
2 cups of heavy cream
1 cup chicken broth
2 cloves garlic, minced
1/2 tsp chili powder
Salt & Pepper to taste
1 cup cooking oil to fry onions (should cover 1 inch of the bottom of your frying pan)
1 cup seasoned flour (salt, pepper, garlic powder, onion powder) to dust onions before frying
Directions
In a medium saucepan, add the garlic and butter. As it melts, add in the sliced mushrooms and stir occasionally until they cook down. Add cream and chicken stock and continue to stir. After about 2 minutes, slowly add the roux and stir so there aren’t any clumps. Once all of the roux is added, stir as the liquid thickens.
In another sauce pan, cook your green beans in boiling water. Once cooked, strain and set aside.
In the creamy saucepan, add the chili powder, salt, and pepper. Remember to taste as you go. You may need more/less chili powder, salt, pepper depending on your taste buds. Turn on low to keep warm.
In a frying pan, heat up the cooking oil. take your thin onions, mix them thoroughly in the seasoned flour. Once the oil is hot enough, take a small handful at a time and fry them in the oil. Have a paper towel on standby once the onions are ready to come out of the oil. The paper will absorb the oil.
Once the beans, onions, and sauce are completed, it’s time to plate! I love that people can add the sauce as light or heavy as they like. So, add the green beans to the plate and then top with the sauce and finally the crispy onions.
