Recently I was out for lunch at Ima in Detroit, celebrating my dad’s birthday. As we were finishing our meal, our server was so sweet and surprised my dad with their tofu yogurt berry parfait dessert.
My dad, mom, and I were definitely intrigued, having never heard of tofu yogurt. I typically think of tofu as a savory dish ingredient or meat replacement. Imagine my surprise when we each took a small spoonful and then looked at one another with small smiles building.
THIS. WAS. DEEEEEEEELISH.
It was silky, light, and smooth. Coupled with berries and this amazing crispy component (I think crushed like cookie or ice cream cone — tbh didn’t think to ask, just eat). Within a matter of minutes, the dessert was devoured and I knew I needed to figure out a way to recreate this.
I chose brownie over their amazing crispy piece, but alone with berries or with a brownie, you won’t be upset about this recipe. Mostly because it couldn’t last 24 hours in my house without being fully consumed.
You will definitely get subtle sweetness in this recipe, and notes of coconut. If you don’t like coconut, feel free to swap for another plant-based cream to keep it vegan or dairy cream if that’s what you keep in your house.
