Picture this.
It’s a warm summer day, you have a cold beverage and you’re absorbing the sun. What could be better? Probably a lemony grown up grilled cheese stick. And I know this makes a better day because I’ve lived it.
All you need to accomplish this is 3 ingredients, a grill, and 20 minutes.
I typically buy my grape leaves in a jar, but more power to you if you jar your own. I slice a block of halloumi and the process truly begins.
When you lay your grape leaf out, you want the ribbed side up. Add the slice of cheese, going horizontally. You want to bring the sides in, and roll up (similarly as you would a burrito). Once all of the leaves have been rolled, it’s time to grill!
Grill for a few minutes on each side so that you get the gorgeous marks on the leaves and the cheese is melting. Remove from the grill, squeeze some lemon juice, and devour.
Ingredients:
1 jar of grape leaves
1-2 blocks of halloumi (depending on how many you’d like to make)
1/2 lemon to juice
Directions:
- Remove a grape leaf from the jar and have ribbed side up. Slice the halloumi cheese in to small rectangles.
- Add 1 rectangular piece of halloumi to the middle of the grape leaf, going horizontally
- Wrap the grape leaf by tucking the sides in and then rolling so it is snug
- On a hot grill, place your grape leaves and allow to cook. They don’t need to be on very long as we aren’t requiring any ingredient to get to a safe temperature. Therefore, cook for 3-4 min per side and then remove.
- Squeeze your lemon over the grilled cheesey grape leaves and enjoy!
